Refreshing beet juice with hint
of lemon rind and sparkling soda.
Ingredients:
Beetroot ½ cup
Honey 1 ½ tbsp (As per taste)
Soda water 1 bottle (474 ml)
Ice cubes 6 pieces
Lemon rind 1 tsp
Lemon juice 5 tsp
Lemon wedges or mint leaves for garnishing (optional)

Procedure:
Cook beetroot until soft, about 20-25 minutes.
Drain the water and keep the cooked beet aside.
Place cooled beets in a food processor and puree until smooth.
In a small bowl, mix honey, lemon juice, and lemon rind.
Add the beet puree to the mixture and mix well. Divide it into 6 equal portions.
Fill each glass with ice cubes and 1 portion of the beet mixture.
Pour soda water and garnish each glass with lemon wedges or mint leaves.
Serve immediately.
