Add little water and knead it into a smooth dough, cover and keep it aside.
Let the dough sit for minimum 2 hours.
In a pan add 1 tsp of ghee add grated & leached carrot with jaggery.
Cook this and make it into a dry stuffing, add cardamom powder and mix it well.
Transfer it to a plate and allow this to cool completely.
Make small balls out of carrot stuff and dough.
Take butter paper or banana leaf or any paper which makes it easily to take poli from the surface and add a drop of oil to paper and spread it on the paper.
Place the dough ball on the paper and pat it using fingers to make a small circle.
Place one carrot stuff ball in the middle and cover it with dough by bringing edges together. And make it into poli.
Heat a pan and transfer the rolled polis to the pan and cook on both sides.
