Couscous Salad

Ingredients:

  • Whole-wheat couscous – 50 gms
  • Zucchini (cut into 1/4-inch pieces) - 20 gms
  • Cucumber (cut into 1/4-inch pieces) - 20 gms
  • Red bell pepper (cut into 1/4-inch pieces) - 20 gms
  • Red onion (Finely chopped) - 20 gms
  • Paneer - 80 gms
  • Ground cumin – 1 Pinch
  • Black pepper crushed – 1 pinch
  • Extra virgin olive oil - 10 ml
  • Lemon juice - 2-3 drops

    Procedure:

    • In a saucepan boil water and add little salt to it. Add couscous and cook until tender, (Approx. 8-10 minutes).
    • Drain the water and keep boiled couscous aside.
    • In a mixing bowl add in zucchini, cucumber, bell pepper, onion, cumin and black pepper. Set aside.
    • In a small bowl, whisk together the olive oil and lemon juice. Pour over the couscous mixture and toss to combine. Cover and refrigerate. Serve chilled.
