Vegetable Dalia Khichdi

Ingredients:

  • Broken Wheat Dalia- 1 cup
  • Cumin Seeds- 1/2 tsp.
  • Asafetida(hing)-1 pinch
  • Ginger, chopped -1/2 inch
  • Garlic, chopped – 1 clove
  • Onion, chopped - 1 medium size
  • Tomato, chopped – 1 medium
  • Bottle Gourd, diced -1 cup
  • Turmeric Powder-1tsp.
  • Red chilli, dry- 2 in no
  • Oil- 1tsp.
  • Salt-A dash (0.4gm) As suggested by the dietitian.

    Procedure:

    • Dry roast daliya on a medium flame for 2 to 3 minutes. Keep aside.
    • Heat the oil in a pressure cooker, add the cumin seeds & asafetida and sauté on a medium flame for 30 seconds.
    • Add ginger, garlic and onions. Sauté on a medium flame for 1 minute.
    • Now, add tomatoes and bottle gourd, mix well & cook on a medium flame for 1 to 2 minutes, while stirring continuously.
    • Add daliya, red chili, turmeric powder, salt and 4 cups of water, mix it properly & pressure cook for 3 whistles on low flame.
    • Allow the steam to escape before opening the lid.
    • Serve with cucumber raita.
